Holaa chefs! (The pandemic did turn a lot of us into chefs so why not?!) Well, until I get to join a culinary school and make some extremely sophisticated dishes I am gonna try and share some basic and rustic recipes I really enjoy and here's one of them!
Ingredients
2 cups oat flour
1 banana
1 1/4 cups milk
2 tbsp chia seeds (cause why not?)
Additional ingredients (for some extra flavor)
1/2 tsp cinnamon
1/4 cup melted coconut oil
1/2 tsp vanilla extract
Instructions:
Place 2 1/2 cups rolled oats in a high-powered blender or food processor. Process until you have 2 cups of fine oat flour. (Skip this step if you’re using pre-packaged oat flour.)
In a medium bowl, stir together the oat flour, mashed banana, milk and chia seeds. Stir to combine.
Heat a griddle pan over medium high heat. Lower the heat to medium low, then pour circles of batter onto the griddle. Use about 1/4 cup of batter for each pancake to get 12 pancakes. Cook for one to two minutes on each side, flipping when the surface of the pancakes are dotted with small bubbles.
Serve with fruit and some more seeds.
I don't eat sugar and I feel banana adds some natural sweetness but if you want it to be more sweet use maple syrup or honey or just slice some dates.
